Costa Rica Don Sabino Micromill
Don Sabino Micromill is a father-son project that produces meticulous coffees in what seems like "simple" conditions but with incredible care and attention to detail.
Though the mill was established in 2011, Steven Vargas and his father have both been in coffee their whole lives. They own several plots of farmland in the area, where they grow a number of different varieties: Villa Sarchi is their primary crop, but they also grow Catuai, Caturra, Gesha, SL-28, and a small amount of Mokka. For several of the mill's early years, the Vargas drying beds were full of only Naturals. But lately, Steven is attempting a small amount of Honey coffee as well.
The Don Sabino micromill manages the farms El Apostol, El Orvo, El Llamarón, and La Roca.
How We Roast
We roast each lot in small batches to bring out what the farmer, the variety, and the process already put there, so every coffee gets its own roast in lieu of a light or dark label.
Farmer
Every coffee here is traceable to the people who grew it, whether that is one family on a single hectare or a group of several thousand smallholders delivering cherry to a shared washing station.
Variety
Variety is the plant itself, and it sets the ceiling on what a coffee can taste like. Typica, Bourbon, Caturra, Mundo Novo and Catuaí all show up in what we buy.
Process
Process is what happens to the cherry after picking. Washed coffees are pulped and fermented, which tends to read clean and bright. Honey coffees keep some fruit on the bean while it dries.
