Guatemala Women CODECH FTO
The Women Producer coffee from CODECH is a special program, and has been one of the catalysts for our expanded Women Producers collaborations. Coffees in this lot are 100% from women-owned or -managed farms. The women growers are paid a premium to have their lots separated out for this specific offering, and the premiums are used in part by the women of CODECH to support health-initiative programs in the community. Half of the premium is collected for a women's health workshop in the municipality of Concepcion Huista, which has a high infant-mortality rate.
The organization's organic certification is not only indicative of its commitment to being environmentally friendly, but also to be independent from transnationals which produce fertilizers. They also want independence from the price of oil (used in fertilizers). CODECH also believes that there is a growing market for organic products and wants to meet that demand.
How We Roast
We roast each lot in small batches to bring out what the farmer, the variety, and the process already put there, so every coffee gets its own roast in lieu of a light or dark label.
Farmer
Every coffee here is traceable to the people who grew it, whether that is one family on a single hectare or a group of several thousand smallholders delivering cherry to a shared washing station.
Variety
Variety is the plant itself, and it sets the ceiling on what a coffee can taste like. Typica, Bourbon, Caturra, Mundo Novo and Catuaí all show up in what we buy.
Process
Process is what happens to the cherry after picking. Washed coffees are pulped and fermented, which tends to read clean and bright. Honey coffees keep some fruit on the bean while it dries.
